Instructions

  1. Preheat the oven to 450°F.
  2. In a large bowl, mix flour, salt, baking powder, and baking soda. Add the chilled butter and cut it in until the mixture looks like coarse meal.
  3. Pour in the buttermilk and stir until just combined. Knead the dough a few times before turning it onto a floured surface.
  4. Pat the dough into a rectangle, fold it like a letter, turn it, flatten it again, and repeat folding 2 to 3 times to create layers.
  5. Roll the dough to a thickness of ½ to ¾ inch and cut out biscuits with a 2-inch cutter, yielding about 12 biscuits.
  6. Place the biscuits on an ungreased baking sheet and brush with the egg wash.
  7. Bake for 10 to 15 minutes until golden brown.

Notes

For the best results, ensure the butter is very cold before cutting it into the flour mixture.
