  • 2 cups zucchini, finely grated and drained
  • 1 small red onion, grated
  • 3 tablespoons olive oil
  • 1 (28-ounce) can crushed tomatoes
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon sugar
  • 2 teaspoons Italian seasoning
  • 1/2 teaspoon crushed red pepper flakes

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. In a large bowl, mix ground turkey, olive oil, minced garlic, eggs, Italian seasoning, salt, pepper, zucchini, and grated onion until well combined.
  3. Form the mixture into two-tablespoon-sized balls and place them on the prepared baking sheet.
  4. Bake for 20-25 minutes until browned and cooked through.
  5. Prepare your marinara sauce while the meatballs bake.

Notes

Ensure to drain the zucchini well to prevent a watery mixture.
You can substitute ground beef for turkey if preferred.
