These Watermelon Popsicles are a refreshing summer treat, featuring delicious layers of fruit and coconut milk, perfect for cooling down on hot days.

Ingredients

  • 2 cups (12oz/340g) Watermelon, diced
  • 1 cup (5oz/142g) Strawberries
  • 4 tablespoons chocolate chips (optional)
  • ½ cup (4fl oz/115g) coconut milk (regular or light)
  • 1 cup (5oz/142g) Kiwi, diced

Instructions

  • Blend watermelon and strawberries until smooth, set aside.
  • Puree kiwi until smooth, set aside.
  • Fill popsicle mold with watermelon-strawberry mixture, add chocolate chips if desired, freeze for 30 minutes.
  • Pour coconut milk layer over the frozen base, freeze for another 30 minutes.
  • Add kiwi puree on top, freeze for at least 5 hours or overnight.
  • Run warm water over the mold to release popsicles.
  • Store leftovers in an airtight container in the freezer.

Notes

Use ripe fruits for the best flavor.
Ensure each layer is fully frozen before adding the next.
Store popsicles for up to 8 weeks in the freezer.
