- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 tablespoon sugar (optional)
- 1/4 teaspoon salt
- 1 3/4 cups milk
- 1/4 cup neutral oil (avocado, vegetable, etc)
- 2 eggs separated
Instructions
- In a large mixing bowl, combine the flour, baking powder, sugar, and salt. Create a well in the center.
- In another bowl, mix the milk, oil, and egg yolks until combined.
- Pour the liquid mixture into the well of dry ingredients and stir gently until just moistened, leaving some lumps.
- In a separate bowl, beat the egg whites until stiff peaks form.
- Fold one-third of the beaten egg whites into the waffle batter to lighten it. Gently fold in the remaining egg whites until no white streaks remain.
- Preheat the waffle maker to high heat.
- Cook the waffles according to the manufacturer's instructions.
Notes
Feel free to add vanilla extract or cinnamon for extra flavor.
You can substitute buttermilk for milk for a richer taste.
Serve with your favorite toppings like maple syrup or fresh fruit.
