Ingredients

  • 2 eggs separated

Instructions

  1. In a large mixing bowl, combine the flour, baking powder, sugar, and salt. Create a well in the center.
  2. In another bowl, mix the milk, oil, and egg yolks until combined.
  3. Pour the liquid mixture into the well of dry ingredients and stir gently until just moistened, leaving some lumps.
  4. In a separate bowl, beat the egg whites until stiff peaks form.
  5. Fold one-third of the beaten egg whites into the waffle batter to lighten it. Gently fold in the remaining egg whites until no white streaks remain.
  6. Preheat the waffle maker to high heat.
  7. Cook the waffles according to the manufacturer's instructions.

Notes

Feel free to add vanilla extract or cinnamon for extra flavor.
You can substitute buttermilk for milk for a richer taste.
