- 1 (12-15 pound) turkey carcass, picked over
- 1 turkey neck (optional)
- Giblets (optional)
- Leftover turkey drippings (optional)
- 1 onion, peeled and quartered
- 4 cloves of garlic, smashed
- 2 large carrots, scrubbed or peeled, chopped into thirds
- 1/3 head of celery, leaves included
- 1 large bunch of parsley, roughly chopped
- 1/2 bunch sage, roughly torn
- 3–4 sprigs fresh rosemary
- 5 sprigs thyme
- 3 bay leaves
- 8–10 whole peppercorns
- 4 quarts of water
Instructions
- Gather ingredients and equipment.
- Combine turkey carcass and vegetables in a large pot.
- Add aromatic vegetables.
- Introduce fresh herbs and seasoning.
- Pour in water to cover ingredients.
- Bring to a boil.
- Simmer for 2-4 hours, skimming off foam.
- Strain the broth into a bowl.
- Cool and store in airtight containers.
Notes
For a richer flavor, simmer the broth for a longer time, ideally closer to 4 hours.
You can skip giblets or drippings without compromising flavor.
Adding leftover vegetables or herbs can create a unique twist.
