  • 4 cloves of garlic, smashed
  • 2 large carrots, scrubbed or peeled, chopped into thirds
  • 1/3 head of celery, leaves included
  • 1 large bunch of parsley, roughly chopped
  • 1/2 bunch sage, roughly torn
  • 34 sprigs fresh rosemary
  • 5 sprigs thyme
  • 3 bay leaves
  • 810 whole peppercorns
  • 4 quarts of water

Instructions

  • Gather ingredients and equipment.
  • Combine turkey carcass and vegetables in a large pot.
  • Add aromatic vegetables.
  • Introduce fresh herbs and seasoning.
  • Pour in water to cover ingredients.
  • Bring to a boil.
  • Simmer for 2-4 hours, skimming off foam.
  • Strain the broth into a bowl.
  • Cool and store in airtight containers.

Notes

For a richer flavor, simmer the broth for a longer time, ideally closer to 4 hours.
