- 2 medium sweet potatoes, cut into 1/2-inch cubes (about 5 cups)
- 1 tablespoon olive oil
- kosher salt and black pepper, to taste
- 1 lb ground turkey
- 1 red bell pepper, stemmed, seeds removed, and diced
- 1/2 yellow onion, diced
- 3 cloves garlic, minced
- 1 (15 oz) can fire roasted tomatoes, with juices
- 1 (15 oz) can black beans, rinsed and drained
- 3 tablespoons taco seasoning
- 1/4 cup chopped cilantro
- 1 1/2 cups shredded monterey jack or cheddar cheese

- sliced avocado or guacamole
- jalapeño ranch
Instructions
- Preheat the oven to 400°F.
- In a greased 9×13-inch baking dish, toss sweet potatoes with olive oil, salt, and pepper, then spread in an even layer. Roast for 20 to 25 minutes, tossing halfway, until tender.
- In a large skillet, heat over medium heat, add ground turkey, onion, and bell pepper, seasoning with salt and pepper. Cook until the turkey is cooked through and vegetables are tender.
- Stir in minced garlic and cook for 1 minute. Then add fire-roasted tomatoes, black beans, and taco seasoning. Stir and simmer for 5 minutes before removing from heat and mixing in cilantro.
- Spoon the turkey and bean mixture over the roasted sweet potatoes in the baking dish. Sprinkle with cheese.
- Bake for 10 minutes until the cheese is melted.
- Top with cilantro, avocado, and jalapeño ranch. Serve warm.
Notes
Feel free to substitute ground turkey with ground beef or chicken if desired.
For an extra kick, add diced jalapeños to the turkey mixture before assembling.
Serve with a side salad for a complete meal.
