- 16 oz pizza dough or bread dough
- 1 1/3 cups diced strawberries (200g)
- 3 tbsp coconut oil or butter (36g)
- 1/3 cup sugar or granulated sugar free sweetener (70g)
- 1 tbsp cornstarch (8g) or 2 tbsp flour
- 1/4 tsp ground cinnamon (optional)
- 4 oz cream cheese or vegan cream cheese
- 1 1/4 cups confectioner's sugar or powdered sugar free sweetener (150g)
- 1 tbsp milk of choice, or more as needed
- 1/2 tsp pure vanilla extract (optional)
Instructions
- Let the pizza dough come to room temperature, then preheat the oven to 350° Fahrenheit (176° Celsius).
- On a floured surface, roll out the dough into a rectangle under 1/8th of an inch thick.
- Spread softened coconut oil or butter evenly over the dough rectangle.
- In a medium bowl, mix the diced strawberries, sugar, cornstarch, and optional cinnamon until well combined.
- Spread the strawberry mixture evenly over the dough.
- Roll the dough tightly into a log shape and slice thin strips with a knife or pizza cutter, allowing some strawberry liquid to seep out if necessary.
- Arrange the rolls in an 8-inch baking pan and bake for 35 minutes in the center of the oven until golden and bubbly.
- Bring the cream cheese to room temperature and whip with vanilla and half a cup of powdered sugar until fluffy.
- Gradually add the remaining powdered sugar, adjusting with milk to reach desired consistency for the icing.
- Frost the warm strawberry sweet rolls so the icing melts into the top.

Ensure the dough is at room temperature for easier rolling.
Feel free to adjust the sweetness of the icing to your preference.
