- 4 cups strawberries, quartered (600g)
- 1 cup granulated sugar (200g)
- 4 tbsp lemon juice
- 1 cup whole milk (240ml)
- ¼ cup granulated sugar (50g)
- 1½ tbsp active yeast (14g)
- 6 tbsp unsalted butter, room temperature (84g)
- 2 large eggs, whisked
- ¼ cup strawberry sauce from above
- 5 cups all-purpose flour (625g)
- 1 oz. freeze dried strawberry powder
- ½ tsp salt
- ¼ cup unsalted butter, room temperature (56g)
- ¾ cup strawberry sauce or jam
- 1 cup chopped strawberries, chopped small
- 1 cup cream cheese, room temperature (356g)
- 4 tbsp unsalted butter, room temperature (56g)
- 2 tbsp strawberry sauce from above
- 1¾ cup powdered sugar (218g)
- ½ tsp vanilla extract
Instructions
- In a saucepan, combine the quartered strawberries, sugar, and lemon juice over medium-high heat.
- Once boiling, reduce the heat to medium-low and continue cooking.
- Cook until the mixture reaches 200 to 220ºF, achieving a dark and thick sauce. If it starts sticking, lower the heat further.
- Remove the sauce from heat, transfer to a bowl, cover with plastic wrap, and let cool. Refrigerate for a couple of hours before use.
Notes
Ensure the strawberries are fresh for the best flavor.
The sauce can be made ahead and refrigerated for up to a few days.
Feel free to adjust the sugar based on the sweetness of the strawberries.
