  • Total Time: 10 hours
  • Yield: 1 pie 1x

Ingredients

Scale
  • All Butter Pie Crust or Homemade Pie Crust
  • 3 cups sliced rhubarb (1/2-inch pieces)
  • 2 and 1/2 cups chopped fresh strawberries
  • 1/3 cup packed light brown sugar
  • 1/3 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 1 Tablespoon orange juice
  • 1/2 teaspoon pure vanilla extract
  • 1 Tablespoon cold unsalted butter, cut into small cubes
  • egg wash: 1 large egg beaten with 1 Tablespoon milk
  • optional: coarse sparkling sugar, for topping

Instructions

  1. Prepare the pie crust by chilling the dough for at least 2 hours in the refrigerator.
  2. In a mixing bowl, combine rhubarb, strawberries, brown sugar, granulated sugar, cornstarch, salt, orange juice, and vanilla, stirring well. Set aside.
  3. Roll out one disc of chilled dough on a floured surface until it's 12 inches in diameter, then place it in a 9-inch pie dish. Fill with the fruit mixture, reserving any leftover juices.
  4. If needed, reduce the reserved juices in a saucepan over medium-low heat for 3-4 minutes until thickened, then pour over the filling in the crust.
  5. Dot cold butter pieces over the filling, and refrigerate while rolling out the top crust.
  6. Roll the second disc of dough to 12 inches, cut into strips, and weave over the pie for a lattice top. Seal the edges by pressing them into the bottom crust.
  7. Brush the top with egg wash, sprinkle with coarse sugar if desired, and refrigerate for about 30 minutes while preheating the oven.
  8. Bake in a preheated oven for 20 minutes. Then lower the temperature to 350°F (177°C), add a pie crust shield, and bake for another 50 minutes until golden brown and bubbling.
  9. Let the pie cool on a rack for at least 5-6 hours before slicing to ensure the filling sets properly.
  10. Store leftovers at room temperature for 2 days or in the refrigerator for up to 5 days.

Notes

Make sure to refrigerate the pie crust for optimal texture.
Allow the pie to cool completely to avoid a runny filling when slicing.
Top with whipped cream or vanilla ice cream for a delicious serving suggestion.
