- 1 box plain angel food cake mix
- 1¼ cups cold water
- 1 cup granulated sugar
- 4 eggs
- ¾ cup fresh squeezed lemon juice
- zest of 1 lemon
- 2 tablespoons butter
- 4 oz cream cheese
- ½ cup powdered sugar
- 1 cup heavy whipping cream
- 1 lb fresh strawberries, finely chopped
Instructions
- Preheat your oven to 350℉ and prepare a 10x15x1" rimmed baking sheet with parchment paper. A light spray of cooking spray on the pan can help the parchment stick.
- In a large bowl, combine the cake mix with the appropriate amount of cold water as specified by the box instructions and whisk until smooth.
- Pour the cake mixture into the prepared baking pan and bake for 20-23 minutes, or until the top is a light golden brown.
- Once baked, dust a clean, lint-free kitchen towel with powdered sugar. Carefully turn the warm cake out onto the towel and remove the parchment paper.
- Starting at one short end, roll the cake up within the towel and let it cool completely. If you plan to leave it for more than a few hours, make sure to wrap it well in the towel or store it in an airtight container.
Notes
For a richer flavor, add more lemon zest to the cream cheese filling.
You can substitute the strawberries with other berries for a different taste.
Ensure the cream cheese is cold to achieve a smoother filling texture.
