- 2 sheets frozen puff pastry, thawed according to package directions

- 2 cups (332 g) fresh strawberries, sliced
- 2 tablespoons granulated sugar
- 1 tablespoon cornstarch
- 1 large egg, room temperature
- 1 tablespoon water
- Confectioners’ sugar, for dusting
- Strawberry Jam or Jelly, for brushing
Instructions
- Preheat your oven to 400°F and line two baking sheets with parchment paper.
- On a floured surface, lay out the thawed puff pastry sheets and cut each into 6 rectangles (about 4 ½ × 3 inches). You will have a total of 12 pastries.
- Place the rectangles on the prepared baking sheets, ensuring there is about 1 inch of space between each one.
- With a fork, gently poke holes in the center of each rectangle without hitting the edges to allow for puffing while baking.
- In a small bowl, mix cream cheese, granulated sugar, vanilla extract, and salt until smooth. If desired, incorporate lemon zest and set aside.
- In another bowl, mix the sliced strawberries with sugar and cornstarch. Let this mixture sit for 5 minutes, then drain off any excess liquid gently.
- Spread approximately 1 tablespoon of the cream cheese mixture onto the center of each pastry rectangle.
- Top the cream cheese with the strawberry mixture, ensuring an even distribution on each pastry.
- Whisk the egg with water in a small bowl, then brush this mixture along the edges of each pastry for a golden finish.
- Bake the pastries for 15 to 18 minutes, or until they puff up and turn golden brown.
- Remove the pastries from the oven and allow them to cool slightly.
- For an optional finishing touch, dust with confectioners’ sugar before serving, and brush warmed strawberry jam or jelly on the strawberries for shine.
Notes
Make sure to thaw the puff pastry according to package directions for the best results.
Fresh strawberries can be replaced with other berries if desired for a different flavor.
For an extra sweet touch, consider adding additional sugar to the cream cheese mixture.
