- 2 large eggs
- ½ cup oil
- 1 cup sugar
- 1 teaspoon vanilla extract
- 1 ¼ teaspoons baking powder
- ¼ teaspoon baking soda
- ½ teaspoon ground cinnamon

- 1.5 cups all-purpose flour
- 1 (10-oz) bag frozen strawberries (thawed and diced)
Instructions
- Preheat the oven to 350°F. Line a 9×5 inch loaf pan with baking parchment.
- In a large mixing bowl, whisk together the eggs, oil, sugar, and vanilla extract until smooth. Add the baking powder, baking soda, ground cinnamon, and salt on top and whisk until fully combined.
- Fold in the flour using a rubber spatula or wooden spoon until just combined. Then, add the strawberries and fold in until the batter is evenly mixed.
- Spread the mixture into the prepared pan and bake at 350°F for 50-60 minutes, covering loosely with foil after 40 minutes if the top gets too dark. A toothpick inserted should come out clean.
- Cool in the pan for 10 minutes, then move to a wire rack to cool completely.
Notes
Make sure to use thawed strawberries for the best results.
Do not drain the juices from the strawberries as it adds to the flavor and moisture of the bread.
Store any leftovers in an airtight container to maintain freshness.
