  • Total Time: 1 hour 30 minutes
  • Yield: 12 servings 1x

Ingredients

Scale
  • 3 ¾ cups (469 g) all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon kosher salt
  • 1 cup (2 sticks / 227 g) unsalted butter, room temperature
  • 2 cups (400 g) granulated sugar
  • 4 large eggs, room temperature
  • 1 cup (245 g) full-fat sour cream, room temperature
  • ½ cup (120 g) whole milk
  • ¼ cup vegetable oil
  • 2 teaspoons vanilla extract
  • ½ cup (100 g) light brown sugar, packed
  • 2 teaspoons ground cinnamon
  • ½ cup (100 g) light brown sugar
  • ½ cup (63 g) all-purpose flour
  • 1 teaspoon ground cinnamon
  • 5 tablespoons unsalted butter, cold, cubed
  • 1 cup (125 g) confectioners' sugar
  • 23 tablespoons whole milk
  • ½ teaspoon vanilla extract, optional

Instructions

  1. Preheat the oven to 350°F (175°C). Prepare a 9×13-inch baking dish with baking spray or grease it with flour.
  2. In a medium bowl, whisk flour, baking powder, and salt together. Set aside for later use.
  3. In a stand mixer bowl, beat butter and granulated sugar on medium speed until light and fluffy, approximately 2 to 3 minutes.
  4. Add eggs one at a time, mixing briefly after each addition.
  5. Incorporate sour cream, milk, vegetable oil, and vanilla extract, mixing on low speed until well combined, even if it looks slightly curdled.
  6. Gradually mix the dry ingredients into the wet ingredients on low speed until just combined, avoiding overmixing.
  7. Spread half of the batter evenly into the prepared baking dish.

Notes

Make sure the butter and eggs are at room temperature for the best texture.
You can add a streusel topping for a delightful crunch by mixing some flour, brown sugar, and butter together before sprinkling it on top.
This cake freezes well. Just wrap it tightly and store in the freezer for up to 3 months.
