  • ½ cup (100 g) light brown sugar, packed
  • ¼ cup (85 g) honey
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 ¾ cups (219 g) all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon kosher salt
  • 1 teaspoon ground cinnamon
  • ¼ cup (50 g) granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a stand mixer with a paddle attachment or using a hand mixer, blend the softened butter, brown sugar, and honey until smooth and glossy.
  3. Add the egg and mix until incorporated. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, salt, and ground cinnamon.
  5. Combine the dry ingredients with the wet ingredients, mixing on low speed until just combined, avoiding overmixing. The dough should be smooth but not sticky.
  6. In a small bowl, mix the granulated sugar with ground cinnamon for the coating.
  7. Scoop out 2-tablespoon portions of dough, roll each into a ball, and then coat in the cinnamon-sugar mixture. Place the balls 2 to 3 inches apart on the baking sheets.
  8. Bake for 8 to 10 minutes, until edges are lightly golden; the centers should look slightly underbaked.
  9. Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  10. Store cookies in an airtight container at room temperature for up to 4 days.

Notes

For a more intense cinnamon flavor, add an extra pinch to the dough mixture.
These cookies taste best when enjoyed fresh, but they remain soft even after a few days, thanks to the honey.
