  • 8 ounces mini marshmallows

Instructions

  1. Preheat the oven to 350°F and line a 9×13” metal pan with foil. Spray the foil with cooking spray.
  2. In a mixing bowl, combine the softened butter and packed brown sugar using a stand or hand mixer until the mixture is crumbly.
  3. Add the eggs and vanilla extract to the bowl, mixing until the mixture is smooth.
  4. Incorporate the salt, baking powder, and all-purpose flour, mixing until combined and wet.
  5. Spread the batter into the prepared pan, using lightly sprayed hands for an even layer since the mixture will be sticky.
  6. Bake for 22-25 minutes, watching for a golden color; it's best to err on the side of slightly underbaked since they will continue cooking as they cool.
  7. Let the blondies cool completely before frosting with chocolate spread and topping with mini marshmallows.
  8. Broil on high for about 1-2 minutes, keeping a close eye to prevent burning the marshmallows. It's best to enjoy these the same day after adding marshmallows.
