Ingredients

  • 1 tbsp ground black or white pepper
  • 1 tsp kosher salt
  • 2 tbsp paprika, sweet hungarian paprika
  • 1 tsp onion powder
  • 1 tsp celery salt
  • 1 tbsp garlic powder
  • 2 tbsp brown sugar
  • 2 tbsp apple cider vinegar
  • ¼ cup apple juice or cider
  • 4 tbsp salted butter, cubed
  • 1 rack baby back ribs, reduce cook time if using spare or st. louis style ribs

Instructions

  1. Pre-soak wood chips in water for 30 minutes.
  2. Preheat wood chips in smoker to 225 degrees Fahrenheit.
  3. Remove ribs from packaging and pat dry.
  4. Take off the silver skin and trim excess from the ribs.
  5. Mix all rub ingredients and coat the ribs thoroughly.
  6. Let the ribs reach room temperature while the smoker heats up.
  7. Smoke the ribs for 3 hours.
  8. Lay out foil and place the ribs on top, adding butter, apple juice, cider, and brown sugar before wrapping tightly in the foil.
  9. Cook the wrapped ribs for 2 hours.
  10. Open the foil, baste the ribs in the cooking liquids.
  11. Remove the ribs and follow any additional steps for serving.

Ensure wood chips are well soaked to prevent burning too quickly.
Adjust cooking times if you are using spare ribs for better tenderness.
