Ingredients
Scale
- 1 pound ground beef (80 percent lean)
- 1 teaspoon salt
- 1 teaspoon black pepper
- 4 burger buns
- 4 slices cheddar cheese
- 1 tablespoon butter
- ½ cup mayonnaise
- 2 tablespoons ketchup
- 1 tablespoon yellow mustard
- 2 tablespoons dill pickles (finely chopped)
- 1 teaspoon pickle juice
- ½ teaspoon garlic powder
- ½ teaspoon paprika
- ½ cup shredded lettuce
- ½ small onion (thinly sliced)
- 8 pickle slices
Instructions
- In a small bowl, mix together the mayonnaise, ketchup, yellow mustard, chopped dill pickles, pickle juice, garlic powder, and paprika. Stir well and chill in the refrigerator until needed.
- Divide the ground beef into 8 equal sections and loosely shape them into balls, being careful not to overwork the meat.
- Heat a cast iron skillet over high heat until hot. Place 2 to 3 beef balls in the skillet and use a spatula to smash each one into a thin patty. Season with salt and pepper and cook for about 2 minutes until the edges are crispy.
- Flip the patties and place a slice of cheddar cheese on one patty in each pair. Cook for an additional minute, then stack the plain patty on top of the cheesy one to form double burgers.
- Butter the burger buns lightly and toast them in the pan until golden brown.
- Spread the special sauce generously on both sides of each bun. Layer the burger patties, followed by shredded lettuce, onion, and pickle slices. Assemble the burgers and serve hot.
Notes
For a spicier kick, add some sriracha to the special sauce.
Feel free to customize toppings with your favorite ingredients like avocado or bacon.
Ensure the skillet is very hot for the perfect sear on the patties.
