- 1 lb ground beef
- 1 medium yellow onion, diced
- 1 cup matchstick carrots
- 2 large green onions, sliced
- 3 garlic cloves, minced
- 6 oz packages ramen noodles (2, 3oz packages), seasoning packets discarded
- optional* extra sliced green onions and sesame seeds for garnish
- 1 ¾ cup beef broth
- ½ cup low sodium soy sauce
- 3 tablespoons brown sugar
- ½ teaspoon ground black pepper
- ½ teaspoon ground ginger
Instructions
- In a large skillet over medium high heat, brown and cook the ground beef until crumbled and fully cooked. Drain excess grease and transfer to the bottom of a 5 quart or larger slow cooker.
- Add the diced onion, matchstick carrots, sliced green onions, and minced garlic into the slow cooker. Whisk together the sauce ingredients and pour over the mixture. Cover and cook on high for 1-2 hours or low for 4-5 hours until vegetables soften.
- Stir in the dry ramen noodles (discard seasoning packets), cover, and cook for another 15-20 minutes on high or 30 minutes on low, stirring occasionally until noodles are fully cooked.
- Garnish with sliced green onions and sesame seeds, then serve immediately.
Notes
For added flavor, feel free to include your favorite vegetables such as bell peppers or spinach.
The dish can be prepared on low heat for meal prepping, saving time on busy weeknights.
Adjust the amount of brown sugar based on your desired sweetness.
