Ingredients

  • 2 pounds boneless chicken breasts or thighs, cubed
  • 4 tablespoons extra virgin olive oil
  • 4 cloves garlic, chopped
  • 1 tablespoon smoked paprika
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon chili flakes
  • 1 1/3 cup plain greek yogurt
  • sea salt and black pepper
  • 1 lemon, quartered
  • 2 sweet potatoes, cut into wedges or quarters
  • 1/3 cup crumbled feta cheese
  • 1/2 cup pistachios
  • 1 cup fresh cilantro
  • 1/2 cup fresh basil
  • 12 jalapeños, halved, and seeded, if desired
  • 1/4 cup lemon juice
  • 1/3 cup sliced green olives

Instructions

  1. Preheat the oven to 425°F.
  2. In a bowl, combine the chicken with 2 tablespoons olive oil, 3 cloves of garlic, smoked paprika, ground cumin, dried oregano, chili powder, chili flakes, and a pinch of salt. Stir in 1/3 cup of yogurt. Optionally, thread the chicken onto skewers and set aside.
  3. On a sheet pan, toss the sweet potatoes with the remaining 2 tablespoons of olive oil and season with sea salt and black pepper. Roast for 15 minutes.
  4. After 15 minutes, remove the sheet pan from the oven, push the sweet potatoes to one side, and arrange the chicken on the other side along with the lemon quarters. Return to the oven and bake for an additional 15–25 minutes until the chicken is cooked through and sweet potatoes are tender.
  5. For the spicy goddess sauce, blend all ingredients until smooth and season with salt to taste.
  6. In a separate bowl, mix together 1 cup of yogurt, 1 chopped garlic clove, and crumbled feta. Season with pepper. Serve the chicken and sweet potatoes with the spicy sauce and feta yogurt.

Notes

Feel free to substitute chicken thighs for breasts for a juicier option.
Add more vegetables to the sheet pan for extra flavor and nutrition.
