  • 34 tablespoons olive oil

  • 1 teaspoon italian seasoning
  • salt and black pepper (to taste)
  • grated parmesan (optional for serving)

Instructions

  1. Preheat the oven to 400°F. You can use an unlined sheet pan or line it for easier cleanup; foil is best.
  2. On the sheet pan, combine the gnocchi, sausage, broccoli, bell pepper, and grape tomatoes. Toss everything with olive oil and seasonings.
  3. Bake at 400°F for 25-35 minutes until the gnocchi are pillowy, tomatoes have burst, broccoli is tender, and sausage is cooked. Stir after 10-15 minutes to distribute juices without mashing the tomatoes. Broil at the end if desired for extra browning, but avoid broiling if using parchment paper.
  4. Serve with optional parmesan cheese.
