- 1 (~16oz) bag refrigerated gnocchi
- 1 (10-12oz) package smoked chicken sausages (sliced into rounds)
- 2 cups bite-sized broccoli florets (about 6oz)
- 1 medium red bell pepper (seeds removed and cut into 1-inch pieces)
- 1 pint grape tomatoes (rinsed but left whole)
- 3–4 tablespoons olive oil
- ½ teaspoon garlic powder
- 1 teaspoon italian seasoning
- salt and black pepper (to taste)
- grated parmesan (optional for serving)
Instructions
- Preheat the oven to 400°F. You can use an unlined sheet pan or line it for easier cleanup; foil is best.
- On the sheet pan, combine the gnocchi, sausage, broccoli, bell pepper, and grape tomatoes. Toss everything with olive oil and seasonings.
- Bake at 400°F for 25-35 minutes until the gnocchi are pillowy, tomatoes have burst, broccoli is tender, and sausage is cooked. Stir after 10-15 minutes to distribute juices without mashing the tomatoes. Broil at the end if desired for extra browning, but avoid broiling if using parchment paper.
- Serve with optional parmesan cheese.
Notes
For optimal baking, avoid using parchment paper as it may make the dish saucier.
Leftovers can be stored in an airtight container in the fridge for up to 2 days. Reheat in the oven for best texture.
