  • 3/4 cup onion diced

  • 1/4 cup all purpose flour
  • 3 cups milk
  • 1 1/2 teaspoons kosher salt

  • 3 cups shredded cheddar cheese divided use
  • 3 pounds russet potatoes thinly sliced
  • 2 cups ham diced
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Preheat the oven to 400 degrees F and coat a 3-quart baking dish with cooking spray.
  2. Melt the butter in a large pan over medium heat. Add the diced onions and sauté for 4-5 minutes until softened.
  3. Stir in the minced garlic and cook for an additional 30 seconds, stirring constantly.
  4. Add the flour to the pan and cook for 1 minute, stirring well.
  5. Gradually whisk in the milk, adding it slowly and stirring after each addition. Incorporate the salt and pepper, then bring the mixture to a simmer.
  6. Cook for 2-3 minutes until the sauce thickens slightly, then remove from heat and stir in 1 cup of shredded cheese.
  7. Layer half of the sliced potatoes in the prepared baking dish, followed by half of the diced ham. Pour half of the cheese sauce over, and sprinkle with 1 cup of cheese.
  8. Repeat the layering with the remaining potatoes, ham, cheese sauce, and cheese on top.
  9. Cover the dish with foil and bake for 50 minutes in the preheated oven.
  10. Remove the foil and bake for an additional 20 minutes, or until the top is golden and the potatoes are tender. If the top browns too quickly, cover with foil again as needed.
  11. Allow to stand for 5-7 minutes before garnishing with chopped parsley and serving.

Notes

For added flavor, try using smoked ham.
Feel free to mix different types of cheese for a unique flavor profile.
Cut the potatoes as thinly as possible for even cooking.
