- 2 tablespoons butter
- 1 tablespoons olive oil
- 1 pound white or yukon gold potatoes peeled and diced into 1-inch cubes (2–3 medium)
- salt & pepper to taste
- 1 small onion diced
- 1 pound smoked sausage halved lengthwise and sliced
- 1 red bell pepper seeded and diced
- 1 green bell pepper seeded and diced
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- fresh minced parsley, for garnish optional
Instructions
- Heat butter and olive oil in a large nonstick or cast iron skillet over medium heat.
- Add the diced potatoes in a single layer and season with about ½ teaspoon salt.
- Cook the potatoes for 10 to 15 minutes, turning occasionally, until they are halfway cooked and starting to brown.
- Incorporate the diced onion and sliced sausage into the skillet.
- Continue to cook for 3 to 5 minutes, stirring occasionally, until the onion softens and the sausage is lightly browned.
- Add the bell peppers, garlic powder, paprika, and black pepper. Stir to combine.
- Lower the heat and cook uncovered for about 10 minutes, stirring occasionally, until the potatoes are tender and fully cooked.
- Taste and adjust seasoning with salt and pepper if needed.
- Garnish with fresh parsley and serve right away. For a hearty variation, top with a fried egg.
Notes
You can substitute the type of sausage for a different flavor profile to suit your taste.
If you prefer a spicier kick, consider adding hot sauce or crushed red pepper flakes to the dish.
