  • 1 small onion diced
  • 1 pound smoked sausage halved lengthwise and sliced
  • 1 red bell pepper seeded and diced
  • 1 green bell pepper seeded and diced
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • fresh minced parsley, for garnish optional

Instructions

  1. Heat butter and olive oil in a large nonstick or cast iron skillet over medium heat.
  2. Add the diced potatoes in a single layer and season with about ½ teaspoon salt.
  3. Cook the potatoes for 10 to 15 minutes, turning occasionally, until they are halfway cooked and starting to brown.
  4. Incorporate the diced onion and sliced sausage into the skillet.
  5. Continue to cook for 3 to 5 minutes, stirring occasionally, until the onion softens and the sausage is lightly browned.
  6. Add the bell peppers, garlic powder, paprika, and black pepper. Stir to combine.
  7. Lower the heat and cook uncovered for about 10 minutes, stirring occasionally, until the potatoes are tender and fully cooked.
  8. Taste and adjust seasoning with salt and pepper if needed.
  9. Garnish with fresh parsley and serve right away. For a hearty variation, top with a fried egg.
