- 2 pounds baby potatoes, washed and halved lengthwise
- ½ cup parmesan cheese, grated, divided
- 4 tablespoons olive oil
- 1 ½ tablespoons garlic, minced
- 1 teaspoon kosher salt

Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Wash the baby potatoes and cut them in half lengthwise.
- In a large bowl, mix ¼ cup of parmesan cheese, olive oil, minced garlic, kosher salt, and black pepper until combined.
- Add the halved potatoes to the bowl and toss them in the mixture to coat evenly.
- Transfer the potatoes to the prepared baking sheet, placing them cut side down. Drizzle any leftover oil mixture over the tops.
- Roast in the preheated oven for 40-45 minutes, flipping halfway through, until they are golden brown and fork-tender.
- Once done, remove from the oven and sprinkle the remaining parmesan cheese over the hot potatoes. Serve immediately.
