Ingredients

- 1 lb fresh beets, peeled and roughly chopped
- 2 medium shallots, peeled and roughly chopped
- 3 Tbsp olive oil, divided
- ½ tsp salt
- ½ tsp pepper
- 1 8-oz block feta cheese
- 1 bulb garlic
- 1 Tbsp lemon juice
- ½ to 1 cup pasta cooking water
- 16 oz pasta (your choice)
- Optional: Burrata cheese for serving
Instructions
- Preheat the oven to 400°F (204°C).
- Toss beets and shallots with olive oil, salt, and pepper in a casserole dish.
- Make a well in the center and place feta cheese and garlic in it.
- Roast for 40-45 minutes until beets are tender.
- Blend roasted vegetables, garlic, lemon juice, and reserved pasta water until smooth.
- Cook pasta and then mix with the blended sauce.
- Serve topped with burrata cheese if desired.
Notes
Use fresh ingredients for the best flavor.
Allow beets to caramelize for added sweetness.
Add spinach for extra nutrition or substitute goat cheese for a different flavor.
