Red-White-Blue Krispie Bites

  • 4 tablespoons unsalted butter
  • 1 (10 oz) bag mini marshmallows reserve 1 cup for stirring in at the end
  • ½ teaspoon vanilla extract
  • ¼ teaspoon salt
  • 5 cups rice krispies cereal
  • 6 oz white chocolate (melting wafers or almond bark)
  • 23 oz red melting chocolate
  • red, white & blue sprinkles

Instructions

  1. Line an 8×8 pan with parchment and lightly butter or spray it.
  2. In a large pot over medium heat, melt 4 tablespoons of unsalted butter. Continue cooking, stirring occasionally, until it turns golden brown and has a nutty aroma with brown specks forming at the bottom. Then, reduce the heat to low.
  3. Add all but 1 cup of mini marshmallows, stirring until completely melted and smooth. Remove from heat and stir in ½ teaspoon of vanilla extract and ¼ teaspoon of salt.
  4. Fold in 5 cups of Rice Krispies cereal until well coated. Gently fold in the reserved 1 cup of mini marshmallows for extra gooeyness.
  5. Transfer the mixture to the prepared pan. Press lightly with buttered hands or the parchment, ensuring not to compact too hard to maintain a soft texture.
  6. Allow to set for 30-45 minutes, then cut into 16 squares.

Notes

For a festive presentation, use a variety of colored sprinkles.
Make sure to let the bars cool sufficiently for easier cutting.
Store in an airtight container to maintain freshness.
