Pork Tenderloin in Dijon Sauce

  • 600 g (1.3lb) pork tenderloin fillet sliced into 1 inch medallions
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp dried oregano
  • ½ tsp paprika
  • 1 ½ tbsp oil (such as avocado oil)
  • 2 cloves garlic peeled and crushed
  • 120 ml (1/2 cup) white wine
  • 120 ml (1/2 cup) chicken stock
  • 1 tbsp dijon mustard
  • 120 ml (1/2 cup) double cream (heavy cream)
  • ¼ tsp worcestershire sauce
  • Buttery mashed potatoes
  • Steamed vegetables (I like green beans and broccoli with this)
  • 2 tbsp freshly chopped parsley
  • freshly ground black pepper

Instructions

  1. Prepare the pork medallions on a cutting board. Combine salt, pepper, oregano, and paprika, then season both sides of the pork medallions with this spice mix.
  2. Heat oil in a large pan over high heat.
  3. Add the pork medallions to the pan, cooking for approximately 2 minutes on each side until golden brown.
  4. Reduce heat to medium and include the crushed garlic in the pan. Stir for about 30 seconds, then pour in the white wine to deglaze the pan.
  5. Allow the wine to simmer for 2 minutes until it reduces slightly, then incorporate the chicken stock and let it simmer for 3 minutes.
  6. Mix in the mustard until well combined, followed by the cream and Worcestershire sauce.
  7. Bring the mixture to a boil, then lower the heat to simmer gently for an additional 2-3 minutes until the sauce thickens slightly.
  8. Turn off the heat, then serve the pork alongside buttery mashed potatoes, green vegetables like green beans and broccoli, garnished with fresh parsley and black pepper.

Notes

For additional flavor, marinate the pork medallions for an hour before cooking.
Serve with your choice of sides for a complete meal.
You can substitute heavy cream with half-and-half for a lighter sauce.
