  • 1 (3 lb.) boneless pork sirloin roast or 1 (23 lb.) boneless center cut pork loin roast
  • 34 tablespoons all-purpose seasoning
  • 2 tablespoons vegetable oil
  • ¼ cup sweet orange marmalade
  • Optional garnish: chopped fresh parsley or thyme

Instructions

  1. Pat the pork dry with paper towels and season generously on all sides with the all-purpose seasoning.
  2. Wrap the seasoned pork in plastic wrap and refrigerate for at least 1 hour, up to 24 hours.
  3. Preheat your oven to 300°F and adjust the oven rack to the middle position.
  4. In a large cast iron skillet over medium-high heat, heat the oil until it's just smoking. Unwrap the pork and place it in the skillet, browning it on all sides for about 7 minutes.
  5. Spread the sweet orange marmalade over the top of the browned pork.
  6. Transfer the skillet to the oven and roast until the pork reaches an internal temperature of 140-145°F, approximately 50 minutes to 1 hour. Check smaller roasts after 45 minutes.
  7. Once done, transfer the pork to a cutting board, allowing it to rest for at least 10-15 minutes before slicing. Garnish with fresh herbs if desired.

Pork can be seasoned and wrapped up to 24 hours in advance for enhanced flavor.
