- 2 1/4 cups all-purpose flour
- 1 teaspoon granulated sugar
- 12 tablespoons (6 ounces) cold unsalted butter, cubed
- 3/4 teaspoon salt
- 1 teaspoon vinegar
- 8–10 tablespoons ice water
- 1 large egg (for egg wash)
- 2 1/2 cups sliced plums (about 6–7 plums)
- 4 tablespoons granulated sugar (for filling)
- 1 tablespoon cornstarch
Instructions
- Whisk together flour, sugar, and salt.
- Cut cold butter into the dry mixture until it resembles coarse crumbs.
- Add vinegar and ice water gradually, mixing gently.
- Wrap dough and chill in the fridge for at least an hour.
- Prepare the plum filling by combining sliced plums with sugar and cornstarch.
- Preheat oven to 400ºF and prepare a baking sheet.
- Roll out chilled dough into circles and place filling in the center.
- Seal edges with egg wash and crimp them.
- Make vent slits on top of each turnover.
- Bake for 15-18 minutes until golden.
Notes
Keep butter and water cold for best results.
Mix until just combined to avoid tough turnovers.
Refrigerate the dough if it gets too soft while assembling.
