Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon granulated sugar
  • 12 tablespoons (6 ounces) cold unsalted butter, cubed
  • 3/4 teaspoon salt
  • 1 teaspoon vinegar
  • 810 tablespoons ice water
  • 1 large egg (for egg wash)
  • 2 1/2 cups sliced plums (about 67 plums)
  • 4 tablespoons granulated sugar (for filling)
  • 1 tablespoon cornstarch

Instructions

  • Whisk together flour, sugar, and salt.
  • Cut cold butter into the dry mixture until it resembles coarse crumbs.
  • Add vinegar and ice water gradually, mixing gently.
  • Wrap dough and chill in the fridge for at least an hour.
  • Prepare the plum filling by combining sliced plums with sugar and cornstarch.
  • Preheat oven to 400ºF and prepare a baking sheet.
  • Roll out chilled dough into circles and place filling in the center.
  • Seal edges with egg wash and crimp them.
  • Make vent slits on top of each turnover.
  • Bake for 15-18 minutes until golden.

Notes

Keep butter and water cold for best results.
Mix until just combined to avoid tough turnovers.
Refrigerate the dough if it gets too soft while assembling.
