  • 1 1/2 cups wholesome yum blanched almond flour
  • 2 tbsp besti powdered monk fruit allulose blend
  • 1/4 tsp sea salt
  • 5 tbsp unsalted butter (melted; or coconut oil for dairy-free)
  • 2 cups pistachios (without shells)
  • 1/4 cup avocado oil (or more as needed – see instructions)
  • 1/4 cup besti powdered monk fruit allulose blend (to taste)
  • 1 tsp vanilla extract (optional)
  • 4 oz strawberries (sliced)
  • 1/3 cup sugar-free dark chocolate chips
  • 1/4 cup pistachios (without shells; chopped)

Instructions

  1. Combine almond flour, powdered monk fruit, and sea salt in a large bowl.
  2. Stir in the melted butter until the mixture is well combined.
  3. Prepare an 8×8-inch baking dish by lining it with parchment paper.
  4. Firmly press the mixture into the bottom of the prepared dish to form a crust. Chill it in the freezer while you make the filling.

Notes

Chill the crust for at least 15 minutes to ensure it holds together when sliced.
Feel free to adjust the sweetness by adding more monk fruit sweetener if desired.
Top with fresh strawberries and additional chopped pistachios for garnish.
