- 1 lb. sharp cheddar cheese, freshly grated from the block
- 1 (4-ounce) jar diced pimentos, not drained
- 1 cup mayonnaise
- kosher salt and ground black pepper, to taste
- 8 slices soft sandwich bread (white, wheat, or brioche-style)
- softened butter or mayonnaise, for spreading on the bread (optional)
- dill pickle slices or sweet pickle chips
- tomato slices
- crisp bacon
- lettuce
Instructions
- Grate the sharp cheddar cheese into a large mixing bowl.
- In another bowl, mix the diced pimentos (with juice) and mayonnaise until well combined.
- Add the mayo mixture to the cheese and fold gently until the cheese is evenly coated. Season with salt and pepper as desired.
- For optimal flavor, cover and refrigerate for at least 30 minutes before serving. The spread can be stored in an airtight container in the refrigerator for 3-4 days.
Notes
Feel free to customize the sandwich with your favorite ingredients like bacon and tomato.
The pimento cheese mixture can also be served as a dip with crackers or veggies.
For a creamier texture, adjust the amount of mayonnaise to your preference.
