Philly Cheesesteak Squares

Ingredients

  • 1 tablespoon unsalted butter
  • ½ cup finely diced red bell pepper
  • ½ cup finely diced green bell pepper
  • 1 medium yellow onion finely diced
  • 16 oz pillsbury crescent rolls
  • ½ cup mayo
  • 2 garlic cloves minced
  • 1 tablespoon dijon mustard
  • ¼ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • 1 lb thinly sliced deli roast beef
  • 12 slices provolone cheese
  • 2 large eggs beaten
  • 1 tablespoon grated parmesan cheese

Instructions

  1. Preheat the oven to 350°F and prepare a 9×13 baking dish with cooking spray.
  2. In a pan, melt the butter over medium-high heat. Add the diced red and green bell peppers and onion, sauté until softened, then set aside.
  3. Unroll one container of crescent rolls and press it into the baking dish, covering the bottom and sides slightly.
  4. In a bowl, mix mayo, minced garlic, dijon mustard, kosher salt, and black pepper. Spread this mixture over the crescent dough.
  5. Layer 6 slices of provolone cheese on top of the mayo mixture.
  6. Distribute the sliced deli roast beef over the cheese.
  7. Top with the sautéed peppers and onions.
  8. Add the remaining 6 slices of provolone cheese on top of the vegetables and beef.
  9. Unroll the second container of crescent dough, roll it out to fit over the fillings, and seal any seams by pinching.
  10. Combine beaten eggs with grated parmesan in a small bowl and brush this mixture over the top of the dough.
  11. Cover with foil and bake for 30 minutes. Remove the foil and bake for an additional 15-20 minutes until golden brown.
  12. Let cool for 10 minutes before slicing and serving.

Notes

For extra flavor, consider adding sautéed mushrooms or hot peppers.
Allow the squares to rest before slicing for cleaner cuts.
These can be prepared ahead of time and reheated for a quick meal.
