- 1 20 ounce bag cheese tortellini
- 1 cup pesto
- 1 and 1/2 cups cherry tomatoes sliced in half
- 1 12 ounce container marinated mozzarella balls drained
- 1/4 cup red onion diced
Instructions
- Bring a large pot of salted water to a boil.
- Add tortellini and cook for 1 and 1/2 minutes. Avoid overcooking!
- Drain and rinse the pasta under cold water until cool.
- Transfer tortellini to a large serving bowl.
- Add pesto, tomatoes, cheese, and onion. Toss well to combine.
- Serve immediately, or cover and refrigerate for up to 3 days.
Notes
For a vibrant salad, use a mix of colored cherry tomatoes.
Feel free to add cooked chicken or vegetables for extra protein and nutrients.
Prepare the salad ahead of time for a quick meal option.
