- 4 boneless skinless chicken breasts medium size, about 2 pounds
- 1 ½ cups bbq sauce your favorite store-bought or homemade
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon paprika or chili powder
- optional garnish: fresh minced parsley
Instructions
- Preheat the oven to 450°F and lightly pound chicken breasts to an even thickness.
- Pour ½ cup of BBQ sauce into a greased 9×13 baking dish, spreading it to coat the bottom.
- In a small bowl, combine salt, pepper, garlic powder, onion powder, and paprika or chili powder. Rub this seasoning on both sides of the chicken.
- Arrange the chicken in a single layer in the baking dish without overlapping. Brush the tops with BBQ sauce until fully covered.
- Bake for 15 minutes, remembering to brush with more sauce halfway through. Check for doneness at 15 minutes; thicker pieces may need 20 to 25 minutes, looking for a temperature of 160°F.
- Move the rack to the top position and set the broiler to high. Broil for 3 to 5 minutes until the sauce caramelizes, watching closely to prevent burning.
- Tent the chicken loosely with foil and let rest for 5 to 10 minutes, allowing the temperature to rise to 165°F before slicing.
- If desired, garnish with fresh minced parsley and spoon any extra sauce from the pan over the chicken before serving.
Notes
For extra flavor, marinate the chicken in BBQ sauce for a few hours before cooking.
Make sure to check the internal temperature to ensure the chicken is thoroughly cooked.
