  • 2 cups flour (240g)
  • 3/4 cup sugar (150g)
  • 2 tsp baking powder
  • 3/4 tsp salt
  • 1/2 tsp baking soda
  • 1 cup orange juice (240g)
  • 3 tbsp oil or butter (36g)
  • 2 tsp pure vanilla extract (10g)
  • 1 tbsp orange zest (zest of 2 small oranges)
  • 1 egg or flax egg (or 3 tbsp additional orange juice)

Instructions

  1. Grease a 9×5 inch loaf pan and optionally line the bottom with parchment paper.
  2. Preheat the oven to 350° Fahrenheit (176° Celsius).
  3. In a large bowl, combine the flour, sugar, baking powder, salt, and baking soda, stirring until well mixed.
  4. Add in the orange juice, zest, oil, egg or flax egg, and pure vanilla extract, mixing gently until just combined. Avoid overbeating the batter.
  5. Transfer the batter into the prepared pan, then bake for 40 minutes, or until the top is lightly golden and a toothpick inserted comes out mostly clean.
  6. Allow to cool fully, then use a knife around the sides of the pan to pop the loaf onto a serving plate. Alternatively, slice directly from the pan.
  7. Store any leftovers loosely covered on the counter for up to overnight, as the flavor improves with time. For longer storage, cover and refrigerate or freeze.

Notes

For a gluten-free option, use gluten-free all-purpose flour.
This bread tastes even better the next day as the flavors meld together.
