- 2 cups flour (240g)
- 3/4 cup sugar (150g)
- 2 tsp baking powder
- 3/4 tsp salt
- 1/2 tsp baking soda
- 1 cup orange juice (240g)
- 3 tbsp oil or butter (36g)
- 2 tsp pure vanilla extract (10g)
- 1 tbsp orange zest (zest of 2 small oranges)
- 1 egg or flax egg (or 3 tbsp additional orange juice)
Instructions
- Grease a 9×5 inch loaf pan and optionally line the bottom with parchment paper.
- Preheat the oven to 350° Fahrenheit (176° Celsius).
- In a large bowl, combine the flour, sugar, baking powder, salt, and baking soda, stirring until well mixed.
- Add in the orange juice, zest, oil, egg or flax egg, and pure vanilla extract, mixing gently until just combined. Avoid overbeating the batter.
- Transfer the batter into the prepared pan, then bake for 40 minutes, or until the top is lightly golden and a toothpick inserted comes out mostly clean.
- Allow to cool fully, then use a knife around the sides of the pan to pop the loaf onto a serving plate. Alternatively, slice directly from the pan.
- Store any leftovers loosely covered on the counter for up to overnight, as the flavor improves with time. For longer storage, cover and refrigerate or freeze.
Notes
For a gluten-free option, use gluten-free all-purpose flour.
This bread tastes even better the next day as the flavors meld together.
