- 1 cup (200 g) packed brown sugar
- ½ cup milk
- 1 cup (258 g) creamy peanut butter
- 1 teaspoon vanilla extract
- 1 pinch kosher salt
- 3 cups (270 g) old-fashioned rolled oats
- 1 ½ cups (273 g) semi-sweet chocolate chips
- 1 teaspoon coconut oil
Instructions
- Line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal.
- In a medium saucepan over medium heat, melt the butter, brown sugar, and milk, stirring until smooth. Bring to a boil and cook for 1 minute, stirring constantly.
- Remove from heat and stir in peanut butter, vanilla extract, and salt until smooth and fully combined.
- Add the old-fashioned oats and stir until the oats are evenly coated.
- Press the mixture firmly into the prepared pan, spreading it into an even layer.
- In a microwave-safe bowl, combine the chocolate chips and coconut oil. Heat in 30-second intervals, stirring after each, until fully melted and smooth.
- Spread the melted chocolate evenly over the oat layer.
- Refrigerate for 30 to 45 minutes, or until the bars are fully set.
- Lift the bars from the pan using the parchment and cut into squares.
Notes
Ensure to pack the brown sugar to get the right sweetness.
You can substitute almond butter for a nut-free option.
For a crunchier texture, consider adding nuts or seeds.
