  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 tablespoon sugar
  • 1/4 teaspoon salt
  • 1 3/4 cups milk
  • 1/4 cup neutral oil
  • 2 eggs
  • 1/2 cup milk
  • 2 eggs
  • 1 tablespoon Dijon mustard
  • 3/4 cup raspberry jam
  • 8 oz shredded gruyere cheese
  • 1/2 pound deli sliced turkey
  • 1/2 pound deli sliced ham
  • 2 tablespoons butter
  • Powdered sugar optional

Instructions

  1. Preheat a mini waffle maker.
  2. In a bowl, whisk together the flour, baking powder, sugar, and salt. In another bowl, combine the milk, oil, and eggs, beating the eggs into the liquid.
  3. Pour the wet ingredients into the dry ingredients and mix until combined.
  4. Make the waffles according to waffle maker instructions.
  5. Pour the milk into a shallow dish. Add the eggs and Dijon mustard, then beat to combine.
  6. Assemble the sandwiches. On each waffle, spread 1 tablespoon of raspberry jam. On 6 of the waffles, add some cheese, followed by the turkey and ham, then top with remaining cheese. Finish with the other 6 waffles jam side down.
  7. Heat a skillet or griddle and melt the butter.
  8. Dip each sandwich into the milk and egg batter, then place in the hot skillet. Cook until golden brown and cheese melts, covering with a lid or foil if necessary. Flip to cook the other side.
  9. If needed, use remaining butter to finish cooking the sandwiches.
  10. Serve warm, dusted with powdered sugar if desired.

Notes

Use a mini waffle maker for perfectly sized waffles.
Ensure the pan is hot enough before placing the sandwiches for optimal crispiness.
Feel free to add more or less raspberry jam to suit your taste.
