Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Wash and cube the sweet potatoes.
- Toss sweet potato cubes with olive oil, salt, and pepper in a bowl.
- Spread on the prepared baking sheet and roast for 25-30 minutes, turning halfway through.
- Sprinkle with feta and Kalamata olives after roasting.
- Garnish with fresh parsley or oregano before serving.
