  • 1/2 cup panko breadcrumbs
  • 1 ½ teaspoons italian seasoning

Instructions

  1. Preheat the oven to 425°F and grease a 9×13-inch baking dish with nonstick cooking spray.
  2. Pat the chicken dry with paper towels and pound to an even thickness if needed. Arrange in the baking dish and season with salt and pepper on both sides.
  3. In a small bowl, combine mayonnaise and parmesan cheese. Spread the mixture evenly over the top of each chicken breast.
  4. Sprinkle panko and Italian seasoning over the mayo-parmesan layer.
  5. Bake uncovered for 18 to 22 minutes until the internal temperature reaches 165°F and the topping is golden brown. Broil for 1 to 2 minutes if needed for extra browning.
  6. Allow the chicken to rest for 5 minutes, garnish with fresh parsley, and serve.
