- 4 boneless, skinless chicken breasts (about 2 pounds)
- salt and pepper to taste
- 1/2 cup mayonnaise (full-fat recommended)
- 1/4 cup grated parmesan cheese
- 1/2 cup panko breadcrumbs
- 1 ½ teaspoons italian seasoning
- fresh parsley (optional for garnish)
Instructions
- Preheat the oven to 425°F and grease a 9×13-inch baking dish with nonstick cooking spray.
- Pat the chicken dry with paper towels and pound to an even thickness if needed. Arrange in the baking dish and season with salt and pepper on both sides.
- In a small bowl, combine mayonnaise and parmesan cheese. Spread the mixture evenly over the top of each chicken breast.
- Sprinkle panko and Italian seasoning over the mayo-parmesan layer.
- Bake uncovered for 18 to 22 minutes until the internal temperature reaches 165°F and the topping is golden brown. Broil for 1 to 2 minutes if needed for extra browning.
- Allow the chicken to rest for 5 minutes, garnish with fresh parsley, and serve.
Notes
For extra flavor, consider adding garlic powder to the mayo mixture.
Ensure the chicken is cooked to the proper temperature by using a meat thermometer.
