  • 1/2 cup vegetable or canola oil, for frying

Instructions

  1. Combine the mashed potatoes, ham, cheddar cheese, garlic powder, chives, and ½ cup flour in a large bowl. Gently mix until just combined without overmixing.
  2. With floured hands, form the mixture into 16 small disks, about ½ inch thick using a cookie scoop for even portions.
  3. In a heavy-bottomed skillet, heat oil over medium to medium-high heat until ready (test with water drops).
  4. Fry the croquettes in a single layer, ensuring they are not crowded, until deep golden brown on both sides, about 2 to 4 minutes per side. Place them on a paper towel-lined plate after frying.
