- 2 cups leftover mashed potatoes
- 1 cup finely diced ham
- 1 cup shredded cheddar cheese
- 2 tablespoons thinly sliced chives
- 1/2 teaspoon garlic powder
- 1/2 cup all-purpose flour plus more for your hands
- 1/2 cup vegetable or canola oil, for frying
Instructions
- Combine the mashed potatoes, ham, cheddar cheese, garlic powder, chives, and ½ cup flour in a large bowl. Gently mix until just combined without overmixing.
- With floured hands, form the mixture into 16 small disks, about ½ inch thick using a cookie scoop for even portions.
- In a heavy-bottomed skillet, heat oil over medium to medium-high heat until ready (test with water drops).
- Fry the croquettes in a single layer, ensuring they are not crowded, until deep golden brown on both sides, about 2 to 4 minutes per side. Place them on a paper towel-lined plate after frying.
- Allow to cool for 5 minutes before serving with your choice of ranch, barbecue ranch, or sriracha mayo for dipping.
Notes
Make sure the oil is hot enough to avoid soggy croquettes.
You can substitute ham with bacon or cooked chicken for different flavors.
