  • 2 large eggs
  • 1–1/2 teaspoons vanilla extract

  • 2 teaspoons cornstarch
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 3 cups all-purpose flour
  • 3/4 cup dry roasted and lightly salted macadamia nuts coarsely chopped
  • 1–1/4 cups white chocolate chips

Instructions

  1. Cut the cold butter into small cubes and place in a large bowl or stand mixer with brown sugar and granulated sugar. Beat until smooth and creamy.
  2. Add the eggs, vanilla extract, and coconut extract (if using) to the mixture. Mix until well combined.
  3. Incorporate cornstarch, baking powder, baking soda, and salt, mixing briefly. Gradually add the flour until a dough forms.
  4. Fold in the white chocolate chips and chopped macadamia nuts until evenly combined.
  5. Preheat your oven to 350°F and line a sheet pan with a silicone baking mat.
  6. Scoop the dough into 40-gram balls and place 6 on each tray, ensuring they are spaced at least 2 inches apart.
  7. Freeze the dough balls on the tray for 10 minutes.
  8. Bake the cookies straight from the freezer for 9 to 12 minutes, until their tops are no longer wet but slightly underbaked.
  9. Once out of the oven, you can press extra white chocolate chips on top if desired. Let them cool on the tray for 5 minutes before transferring to a cooling rack.

Notes

Using super soft or fresh brown sugar yields a better texture in cookies.
Make sure to space the dough balls at least 2 inches apart to allow for spreading during baking.
Chill the dough in the freezer before baking ensures the cookies hold their shape well.
