- 3 tbsp mayonnaise
- 2 tbsp greek yogurt
- 1/3 cup celery (sliced thinly)
- 1/2 tsp sea salt (to taste)
- 1/4 tsp black pepper (to taste)
- 4 medium hot dog buns (regular or gluten-free)
- 1 tbsp unsalted butter

Instructions
- Fill a large pot with water to a depth of 1-2 inches, and insert a steamer basket above the water. Bring the water to a boil over high heat.
- Arrange the lobster tails in the steamer basket in a single layer, ensuring they are not crowded. Cover and steam for about one minute per ounce of the lobster tail. The shells should turn bright red, and the internal temperature should reach 135-140 degrees F.
- Once cooked, use tongs to remove the lobster tails. Rinse them briefly with cold water until they are cool enough to handle. Cut open the shells, extract the meat, and chop it into bite-sized pieces.
Notes
For added flavor, you can toast the hot dog buns with a little butter before serving.
Feel free to customize your lobster roll with additional toppings like diced cucumber or avocado.
Serve with lemon wedges for a refreshing finish.
