This Lemon Loaf is packed with irresistible flavors and simples ingredients that create a moist, delicious treat. Perfect for gatherings or a sweet snack!

  • Total Time: 2 hours 4 minutes
  • Yield: 12 servings 1x

Ingredients

Scale
  • 1 ⅔ cups (335 g) granulated sugar
  • 3 tablespoons lemon zest
  • ½ cup (113 g) unsalted butter, softened
  • ¼ cup (60 ml) neutral cooking oil
  • ⅔ cups (160 g) sour cream
  • 4 large eggs, room temperature, yolks and whites divided
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 2 ¼ cups (250 g) cake flour
  • ¾ teaspoon baking powder
  • ¾ teaspoon table salt
  • 1 ½ cups (190 g) powdered sugar
  • 13 tablespoon lemon juice, as needed
  • 1 ½ tablespoons salted butter, melted
  • ¼ teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350F (175C) and lightly grease and flour a 9×5” (23x12cm) bread pan or line it with parchment paper.
  2. In a large mixing bowl, beat the granulated sugar, softened butter, and lemon zest together with an electric mixer for about 3-4 minutes until light and fluffy.
  3. Add the neutral cooking oil and mix until combined.
  4. In another bowl, whisk together sour cream, egg yolks, lemon juice, and vanilla extract, and then stir into the butter mixture at low speed until fully incorporated.
  5. In a separate bowl, whisk together cake flour, baking powder, and salt. Gently fold the dry ingredients into the wet batter until combined.
  6. In a clean, dry bowl, whip the egg whites using an electric mixer until stiff peaks form, then gently fold into the batter until smooth.
  7. Pour the combined batter into the prepared loaf pan and place it in the oven to bake for 74 minutes or until a skewer comes out clean.
  8. Once baked, let the loaf cool in the pan for 15 minutes before loosening the edges with a knife and transferring it to a cooling rack.
  9. For the glaze, whisk together powdered sugar, lemon juice, melted butter, and vanilla extract until smooth, adding more lemon juice if necessary.
  10. Spread the glaze over the warm loaf and let it sit for at least 30 minutes before slicing.

Notes

Use fresh lemon juice and zest for the best flavor.
Let the loaf cool completely before slicing for cleaner pieces.
Store leftovers in an airtight container at room temperature for up to 3 days.
