  • 2 tablespoons fresh lemon juice, room temperature
  • 3 teaspoons lemon zest, about 1 medium lemon, zested
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon extract
  • 1 cup (120 g) confectioners’ sugar

Instructions

  1. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  2. In a large bowl, beat the butter and granulated sugar with a mixer on medium-high speed until light and creamy, about 3 minutes.
  3. Add the egg, lemon juice, lemon zest, vanilla extract, and lemon extract, and mix until combined, about 1 minute. Scrape down the bowl as needed.
  4. Combine the flour mixture with the wet ingredients and mix on low speed until just blended; the dough will be thick.
  5. Pour the confectioners' sugar into a small bowl for rolling the cookies.
  6. Using a cookie scoop, portion the dough onto a parchment-lined baking sheet and roll each ball in confectioners’ sugar until fully coated. Place them back on the sheet.
  7. Cover the cookie dough and refrigerate for 1 hour.
  8. Preheat the oven to 350°F (177°C) and line baking sheets with parchment paper.
  9. Space the dough balls about 2 inches apart on the sheets.
  10. Bake for 11 to 13 minutes until the edges are set but the centers look soft.
  11. Let the cookies cool on the sheet for about 5 minutes before transferring them to a wire rack to cool completely.
  12. Store the cookies in an airtight container at room temperature for up to 1 week.
