  • 1/4 cup packed light brown sugar
  • 2 tablespoons cornstarch
  • 2 teaspoons lemon zest
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon fine sea salt
  • 2 cups (240g) all-purpose flour
  • 1/3 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon fine sea salt
  • 1/2 cup cold unsalted butter (cut into 1-tablespoon chunks)
  • 2/3 cup cold buttermilk (plus extra for brushing)
  • 2 tablespoons turbinado sugar

Instructions

  1. Preheat the oven to 375°F.
  2. In a large mixing bowl, gently toss together the blueberries, strawberries, blackberries, granulated sugar, brown sugar, cornstarch, lemon zest, lemon juice, vanilla extract, and salt until mixed.
  3. Transfer the berry mixture to a 9 x 13-inch baking dish, spreading it out evenly.
  4. Bake the berries for 10 minutes as you prepare the cobbler topping.
  5. In a food processor, combine flour, sugar, baking powder, and salt. Pulse briefly to mix.
  6. Scatter the butter chunks over the dry mixture. Pulse in short bursts until the mixture resembles coarse crumbs with some pea-sized pieces of butter left.
  7. Add buttermilk and pulse until the dough begins to clump, about 4 to 6 short pulses. Do not overmix.
  8. After 10 minutes, remove the baking dish from the oven. Distribute the cobbler topping over the hot berries using your fingers, covering most of the surface with small chunks.
  9. Lightly brush the topping with buttermilk, then sprinkle with turbinado sugar.
  10. Bake for 40–45 minutes until the topping is golden brown and the berry filling is bubbling at the edges.
  11. Once baked, transfer the dish to a wire rack and let it cool for 20-30 minutes to thicken the juices.
  12. Serve warm with a scoop of vanilla ice cream.

Notes

For a sweeter cobbler, adjust the sugar according to your taste.
