Leftover Pie Parfaits

Ingredients

  • 1 slice of leftover apple or berry pie, or any pie with a crumble or pastry topping- separate filling from crust
  • ¼ cup fresh berries
  • ¼ cup berry yogurt, or whipped cream, ice cream if a dessert
  • 2 tbsp butter

Instructions

  1. In a wine glass, place the filling of the pie at the bottom.
  2. Layer fresh berries on top of the pie filling, then add the berry yogurt or whipped cream.
  3. Set this mixture aside.
  4. In a nonstick pan, melt 2 tablespoons of butter.
  5. Crumble the pie crust into the pan using the back of a fork or spatula.
  6. Heat the crust until lightly browned, allowing small clumps to form.
  7. Top the parfait with the browned crust and serve immediately.

Notes

Feel free to use any type of leftover pie, as the flavors will mix well with the berries and yogurt.
For a richer flavor, consider using ice cream instead of yogurt or whipped cream.
