- 1 tablespoon fresh key lime zest
- 2 tablespoons key lime juice, or regular lime juice

- 2 ¼ cups (280 g) all-purpose flour
- 4 ounces cream cheese, room temperature
- ¼ cup (½ stick / 57 g) unsalted butter, room temperature
- 2 to 2 ½ cups (240 g to 300 g) confectioners' sugar
- 1 tablespoon key lime juice
- 1 teaspoon key lime zest
- 1 pinch kosher salt
Instructions
- Preheat the oven to 375°F and line a baking sheet with parchment paper.
- In a large bowl, cream the softened butter, confectioners’ sugar, salt, and key lime zest until fluffy, about 3 to 4 minutes.
- Mix in the key lime juice and vanilla extract until well combined.
- Gradually add in the flour and mix gently until a soft dough forms. Avoid overmixing.
- Scoop about 2 tablespoons of dough, roll into balls, and arrange on the prepared baking sheet.
- Gently flatten each cookie using the bottom of a glass to about ½-inch thick.
- Bake for 10 to 13 minutes, or until the edges are set and slightly golden.
- Allow cookies to cool completely on the pan or transfer them to a wire rack before frosting.
Notes
For a deeper lime flavor, add more zest and juice when frosting.
Make sure to cream the butter and sugar thoroughly for a lighter texture.
