Ingredients
Scale
- 3 stalks Kale, about 3 handfuls of loose kale
- 2 romaine lettuce hearts
- 4 oz Swiss cheese block
- 2 tomatoes
- 1 cup Castelvetrano olives
- ½ lb precooked sliced ham
- 1 cup parmesan flakes
- Mediterranean Dressing
- ½ cup extra virgin olive oil
- ¼ cup white wine vinegar
- 2 tbsp worcheshire
- 1 tbsp olive juice, from canned olives
- 1 lemon, juiced
- 1 tbsp dried oregano
- 1 tsp kosher salt
- 1 tsp fresh cracked black pepper
- 3 garlic cloves, minced
Instructions
- Prepare the dressing by finely mincing the garlic.
- Combine all dressing ingredients in a mason jar and shake vigorously.
- Set aside the dressing until ready to use. For enhanced flavor, consider making it the night before.
- For the salad, slice the kale and romaine into ½” strips.
- Julienne the cheese, ham, and tomatoes into small strips.
- In a bowl, combine the kale, romaine, cheese, ham, tomatoes, olives, and ¾ of the parmesan. Toss to mix.
- Pour ½ of the dressing over the salad and toss to coat everything evenly.
- Reserve the remaining dressing for serving.
- Top the salad with the remaining parmesan cheese and serve the extra dressing on the side.
Notes
Making the dressing in advance helps intensify the flavors.
Feel free to customize the salad with your favorite ingredients.
