- 4 large eggs
- 1 ¾ cups buttermilk
- 1 cup granulated sugar
- ½ cup brown sugar packed
- ½ cup bisquick
- ¼ cup unsalted butter melted and cooled slightly
- 2 tsp vanilla extract
- 1 tsp lemon zest
- 1 tbsp lemon juice
- ¼ tsp fine sea salt
- 1 to 2 tbsp powdered sugar
Instructions
- Preheat the oven to 350°F and grease a 9-inch pie plate.
- In a large bowl, combine the eggs, buttermilk, both sugars, bisquick, melted butter, vanilla extract, lemon zest, lemon juice, and salt. Mix until smooth, about 20-30 seconds.
- Pour the mixture into the greased pie plate and bake for 40-45 minutes. The pie is done when the top is golden and the center jiggles slightly (a knife inserted should come out mostly clean).
- Let the pie cool on a rack for 1 hour, then chill for at least 1-2 hours for clean slicing. Before serving, sprinkle powdered sugar on top and enjoy it cool or at room temperature, optionally topping with whipped cream or berries.
Notes
For a richer flavor, use fresh lemon juice and zest.
Make sure to chill the pie for the best slicing results.
