Instructions
- Preheat the oven to 425°F (218°C) and line two large baking sheets with parchment paper or silicone baking mats.
- Wash and peel the sweet potatoes, then cut them into thin sticks about 1/4-inch wide. Make sure to pat the fries dry with paper towels to help them become crisp.
- In a large bowl or zip-top bag, toss the sweet potatoes with cornstarch for a thin coating. Use a strainer to eliminate any excess cornstarch, then place the fries back in the bowl and add oil, salt, and any preferred seasonings.
- Arrange the sweet potato fries in a single layer on the baking sheets, ensuring there's space between each fry.
- Bake the fries for 15 minutes, then remove them from the oven and flip each fry. Return the baking sheets to the oven, rotating them, and bake for an additional 10–15 minutes until crispy.
- For extra crispiness, turn off the oven and let the fries sit inside for 20–30 minutes before serving.
